How to Properly Clean a Hood
Hood Cleaning is the process of removing grease and residue buildup from your kitchen exhaust system. It’s a necessary part of restaurant maintenance, preventing fire hazards and poor ventilation that could threaten the health of your employees and customers. It also helps you stay in compliance with NYC regulations. When choosing a hood cleaning company, look for one that is FDNY-certified and cleans to NFPA 96 standards.
Start by turning off all cooking equipment and ensuring the exhaust hood is not in use. Lay down plastic sheeting or drop cloths to protect surrounding surfaces and equipment from the cleaning solution and debris. Cover your face and wear gloves to protect your skin and eyes from the chemicals.

Next, spray the degreaser chemical onto the hood and inside the ducting and exhaust fan. Allow the dwell time to elapse, then begin rinsing off the chemicals, beginning at the furthest end of the ducting and working your way back toward the hood. Rinse thoroughly, ensuring that you have removed all of the grease and soap deposits.
Finally, remove the filters and grease trap tray (if applicable) from the hood. Soak them in the degreaser solution for 3-6 hours or more to break up any grease and grime that has accumulated on their surface. Once they’re dry, rinse them again and scrub if necessary.
Once the hood has been scrubbed and rinsed, remove any remaining grease with a scraper and dispose of it according to local waste disposal guidelines. Then, wipe down the interior of the hood, including the vents and fans. Ensure the exhaust hood and fans are in good working condition before installing them and apply a sticker required by law to show that it’s been cleaned.
